  • 1 pound lean ground beef
  • 1 large onion, diced

  • 1 (14-ounce) bag coleslaw mix

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha
  • 1 teaspoon sesame seed oil
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds, for garnish

Instructions

  1. Heat the oil: Heat the avocado oil in a large deep skillet or wok over medium-high heat to prepare for cooking the beef and vegetables.
  2. Cook the beef and onion: Add the lean ground beef and diced onion to the skillet. Cook for 5–6 minutes, breaking up the beef with a wooden spoon, until the beef is browned and fully cooked.
  3. Add garlic and ginger: Stir in the minced garlic and grated fresh ginger. Cook for 1–2 minutes, stirring often, until fragrant and aromatic.
  4. Scramble the eggs: Push the beef mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until just set. Then mix the eggs into the beef mixture evenly.
  5. Add coleslaw mix and sauces: Add the bag of coleslaw mix, soy sauce, rice vinegar, sriracha, and sesame seed oil. Stir well to combine all ingredients and cook for 3–5 minutes, stirring occasionally, until the cabbage softens but retains some crunch.
  6. Finish and garnish: Remove from heat. Stir in the sliced green onions. Sprinkle toasted sesame seeds on top before serving to add a nutty flavor and crunch.
