A no-bake Eggless Apple Cheesecake Mousse with Pistachios, combining creamy cheesecake flavor with fresh apples, a hint of saffron, and crunchy pistachios for an elegant chilled dessert.

Ingredients

1 apple, peeled, cored, and chopped

1 tbsp lemon juice

8 oz cream cheese

⅓ cup sugar

8 oz sour cream

4 tbsp pistachios, chopped

1 tsp saffron strands

Instructions

  1. Peel, core, and chop the apple into small pieces.
  2. Toss apple pieces with lemon juice to prevent browning.
  3. In a mixing bowl, beat cream cheese and sugar until smooth and fluffy.
  4. Add sour cream and beat until creamy and well combined.
  5. Gently fold in apple pieces.
  6. Lightly crush saffron strands and stir into mousse mixture.
  7. Spoon mousse into serving glasses or bowls.
  8. Chill in the refrigerator for at least 2 hours, or until set.
  9. Top with chopped pistachios before serving.

Notes

Caramelize apples before folding them in for a richer flavor.

Add cardamom with saffron for a spiced note.

Layer mousse with crushed cookies or graham crackers for added texture.
