Feel-Good Apple Muffins are wholesome, naturally sweetened treats packed with oats, dates, and fresh grated apples. Moist, tender, and lightly spiced, they make a perfect breakfast, snack, or anytime pick-me-up. Free from refined sugar, easy to make, and customizable with your favorite mix-ins, these muffins are both nourishing and delicious.

Ingredients

2 cups rolled oats

8 medjool dates, pitted (about 3/4 cup)

1/2 cup olive oil

1/4 cup real maple syrup

12 apples, grated (about 12 cups total)

2 eggs

1 teaspoon baking soda

Pinch of sea salt and/or cinnamon (optional)

Coconut, seeds, nuts, or butterscotch chips (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. Pulse dates in a food processor or finely chop by hand.
  3. In a large bowl, combine oats, chopped dates, olive oil, maple syrup, grated apples, eggs, baking soda, and pinch of salt or cinnamon. Stir until well combined.
  4. Scoop batter into prepared muffin tin, filling each cup about 3/4 full.
  5. Add optional toppings like coconut, seeds, nuts, or butterscotch chips.
  6. Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool muffins 5–10 minutes in tin, then transfer to wire rack to cool completely.

Notes

Swap apples for grated pear or zucchini for a different flavor.

Add a teaspoon of vanilla extract or pinch of nutmeg for extra warmth.

Mix in dried cranberries, raisins, or chocolate chips for added texture.

Make it nut-free by skipping nuts and seeds.
