Light and refreshing cucumber roll ups filled with a creamy feta dill spread. A crisp, tangy, and elegant appetizer perfect for summer parties or snacks.

Ingredients

2 English cucumbers

1 (227 g) package whipped cream cheese

3/4 cup feta cheese, divided

1/4 cup + 1 tbsp fresh dill, divided

1/2 tsp garlic puree

1 tbsp lemon juice

Instructions

  1. In a mixing bowl, combine whipped cream cheese, 1/4 cup feta, garlic puree, lemon juice, and 1 tbsp dill. Stir until smooth.
  2. Trim ends off cucumbers and peel lengthwise into thin ribbons using a vegetable peeler or sharp knife. Discard peel and first few slices, then make about 20 usable ribbons.
  3. Lay one cucumber slice flat. Spread with a small spoonful of cream cheese mixture, then sprinkle with feta and dill.
  4. Roll tightly from one end to the other.
  5. Repeat with remaining cucumber slices and filling.
  6. Serve immediately for best flavor and texture.

Use herbs like basil, mint, or parsley for different flavors.

Add a drizzle of olive oil to the filling for richness.

Sprinkle red pepper flakes or black pepper for a mild kick.
