Ingredients

Deviled Egg Filling

  • 12 hard boiled eggs, peeled and halved lengthwise
  • ½ cup mayonnaise

  • 1 tablespoon green olive or dill pickle brine
  • ½ teaspoon dried dill
  • Salt and pepper to taste

Dredging & Frying

  • 1 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 2 large eggs, beaten
  • 1 teaspoon Tabasco sauce
  • 2 cups panko breadcrumbs
  • Neutral oil for frying (canola or vegetable)

Instructions

  1. Prepare Deviled Egg Filling: Carefully remove the yolks from the halved hard-boiled eggs and place them in a medium bowl. Mash the yolks with mayonnaise, Dijon mustard, Worcestershire sauce, olive or pickle brine, dried dill, salt, and pepper until smooth and creamy.
  2. Fill Egg Whites: Spoon or pipe the yolk mixture back into the egg white halves, making sure each is well filled and shaped nicely.
  3. Set Up Dredging Station: In three separate shallow dishes, place the flour mixed with smoked paprika and kosher salt; beaten eggs mixed with Tabasco sauce; and panko breadcrumbs.
  4. Coat Deviled Eggs: Gently dredge each filled egg half first in the seasoned flour, then dip into the beaten eggs, and finally coat them evenly with the panko breadcrumbs.
  5. Choose Cooking Method:
    • For Deep Frying: Heat neutral oil in a deep pan to 350°F (175°C). Fry the coated eggs in batches for about 2-3 minutes or until golden brown and crispy. Drain on paper towels.
    • For Air Frying: Preheat air fryer to 375°F (190°C). Lightly spray the coated eggs with oil and air fry for 8-10 minutes until golden and crispy, flipping halfway through.
    • For Baking: Preheat oven to 400°F (200°C). Place coated eggs on a baking sheet lined with parchment paper, lightly spray with oil, and bake for 12-15 minutes until crispy and golden.
