These fudgy banana brownies combine rich dark chocolate and ripe bananas to create moist, decadent treats with a deep chocolate flavor enhanced by espresso and vanilla. Perfectly fudgy and easy to make, they’re ideal for sharing or enjoying as a special dessert.

Ingredients

Wet Ingredients

  • 2/3 cup unsalted butter
  • 8 oz dark chocolate (60% cocoa or more)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup ripe bananas, mashed

Dry Ingredients

  • 1 cup granulated sugar
  • 1 tsp espresso powder
  • 1/2 tsp kosher salt
  • 1/2 cup Dutch-processed cocoa powder
  • 1/2 cup all-purpose flour

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 180°C (350°F) and line an 8 by 8-inch baking pan with parchment paper to prevent sticking.
  2. Melt Butter and Chocolate: In a large mixing bowl, combine butter and dark chocolate. Melt them together completely either in the microwave or over a Bain Marie (double boiler) until smooth.
  3. Whisk Eggs and Sugar: In another large bowl, whisk the eggs and granulated sugar vigorously for about 3 minutes until the mixture turns pale and thick, incorporating air for better texture.
  4. Combine Chocolate with Egg Mixture: Pour the melted chocolate and butter into the egg and sugar mixture. Sift in the cocoa powder, then add vanilla extract, mashed banana, kosher salt, and espresso powder. Mix gently to combine all ingredients.
  5. Add Flour and Fold: Sift the all-purpose flour over the mixture. Use a rubber spatula to fold the flour into the batter carefully until just combined, taking care not to overmix.
  6. Bake the Batter: Pour the brownie batter evenly into the prepared pan. Use an offset spatula to smooth the surface. Bake in the preheated oven at 180°C (350°F) for 30 to 35 minutes. Avoid overbaking to maintain the fudgy texture.
  7. Cool and Serve: Let the brownies cool in the pan for at least 30 minutes to firm up, preventing them from crumbling. For an extra touch, top each slice with a fresh banana slice before serving.

Notes

  • Do not overbake to maintain fudginess; start checking at 30 minutes.
  • Use ripe bananas for natural sweetness and moisture.
  • Espresso powder enhances the chocolate flavor without adding coffee taste.
  • Allow brownies to cool completely before slicing for clean cuts.
  • Store leftovers in an airtight container at room temperature up to 3 days or refrigerate for up to a week.
