Ingredients

1.5 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper

1/4 cup beef broth

1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season beef with salt, pepper, onion powder, paprika, thyme, and rosemary.
  3. Sear beef in batches until browned on all sides but still tender inside. Set aside.
  4. In the same skillet, add baby potatoes and beef broth. Cover and cook 12–15 minutes until fork-tender.
  5. Add minced garlic and butter, stirring until garlic is fragrant and butter forms a sauce.
  6. Return beef bites to the skillet, tossing with potatoes until coated in garlic butter.
  7. Cook 2–3 more minutes to blend flavors. Serve hot.
