Parmesan Cream Sauce

  • 5 tablespoons butter, divided
  • 10 cloves garlic, minced, divided
  • 1.5 cups heavy cream
  • 2 green onions, diced (green and white parts)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2/3 cup parmesan cheese, grated/shredded/shaved

Cheesy Mashed Potatoes

  • 4 lbs russet potatoes
  • 1 cup half and half, warmed
  • 6 tablespoons salted butter, melted
  • 3/4 cup shredded Monterey Jack cheese (or mozzarella, pepper jack, etc.)
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • About 1/2 teaspoon black pepper

Instructions

  1. Prepare Blackened Seasoning: In a small bowl, combine smoked paprika, cayenne pepper, onion powder, garlic powder, black pepper, salt, dried thyme, and dried oregano. Mix well to create the blackened spice blend. Set aside.
  2. Prep the Potatoes: Peel and cut the russet potatoes into even chunks. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain thoroughly.
  3. Mash the Potatoes: Return drained potatoes to the pot. Add warmed half and half, melted salted butter, garlic powder, salt, pepper, and shredded cheese. Mash until smooth and creamy. Keep warm.
  4. Season the Steak: Pat the steak bites dry with paper towels. Toss generously with the prepared blackened seasoning, ensuring each bite is well coated.
  5. Sear the Steak Bites: Heat avocado oil in a heavy skillet or cast iron pan over medium-high heat until shimmering. Add the steak bites without crowding the pan. Sear for 2-3 minutes per side until nicely browned and cooked to desired doneness. Remove from pan and keep warm.

  7. Make the Parmesan Cream Sauce – Step 2: Slowly pour in the heavy cream, stirring to combine. Add diced green onions and red pepper flakes. Bring to a gentle simmer and cook for 3-4 minutes until slightly thickened.
