Ingredients

Steak

  • 1 1/2 pounds sirloin steak, cut into chunks
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper

Cooking

  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons butter
  • 3-4 garlic cloves, thinly sliced
  • 3 sprigs fresh thyme

Garnish

  • Chopped fresh Italian flat-leaf parsley
  • Flaky sea salt
  • Coarsely ground black pepper (optional)

Instructions

  1. Season the steak and rest for flavor: Place the sirloin steak chunks onto a baking sheet and sprinkle with Kosher salt. Toss well to coat evenly. Arrange the pieces in a single layer and refrigerate uncovered for at least 30 minutes or up to overnight to enhance flavor and texture.
  2. Toss with oil and cook in a hot pan: Drizzle the steak bites with extra virgin olive oil and toss to coat thoroughly. Heat a large cast-iron or stainless steel skillet over medium-high heat until very hot. Add the steak bites in a single layer, being careful not to crowd the pan, and season with freshly ground black pepper. Cook for about 4-5 minutes, turning occasionally, until the pieces are browned on all sides and release easily from the pan. Cook in batches if needed.
  3. Add butter, garlic, and thyme to the skillet: Move the cooked steak bites to one side of the skillet and add butter, thinly sliced garlic, and fresh thyme sprigs to the empty side. Tilt the skillet slightly to melt the butter and create a garlic butter sauce. Toss the steak pieces in the melted butter to coat them with the aromatic garlic and thyme flavors.
  4. Transfer to a serving plate and garnish: Remove the steak bites from the skillet and arrange on a serving platter. Drizzle with the remaining garlic butter mixture from the pan. Sprinkle with chopped fresh Italian flat-leaf parsley, flaky sea salt, and, if desired, additional ground black pepper for extra seasoning. Serve immediately for best taste and texture.
