Made with ground chicken, Parmesan cheese, garlic, and Italian herbs, these savory mini loaves are topped with marinara sauce and melted mozzarella for a comforting meal that’s healthier than traditional beef meatloaf. For the Meatloaf:
1 pound Ground Chicken
1/2 cup Grated Parmesan Cheese
1/4 cup Milk
1/2 cup Breadcrumbs
2 cloves Garlic, minced
1 large Egg
1 tablespoon Fresh Parsley, chopped
1 teaspoon Dried Oregano
1 teaspoon Onion Powder
Salt and Pepper, to taste
For the Toppings:
1/4 cup Marinara Sauce
1/4 cup Shredded Mozzarella Cheese
Preheat your oven to 375°F (190°C). Grease or line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, milk, breadcrumbs, minced garlic, egg, fresh parsley, dried oregano, onion powder, salt, and pepper.
Mix everything until fully combined, but be careful not to overwork the mixture to avoid tough meatloaf.
Shape the mixture into mini meatloafs or one large loaf and place them on the prepared baking sheet.
Bake for 25-30 minutes or until fully cooked (internal temperature should reach 165°F / 74°C).
In the last 5 minutes of baking, top each meatloaf with marinara sauce and shredded mozzarella cheese.
Return to the oven for 5 minutes or until the cheese is melted and bubbly.
Let the meatloafs rest before serving.
