Garlic Shrimp & Tomato Pasta is a quick, flavorful dish featuring succulent shrimp, juicy cherry tomatoes, and perfectly cooked spaghetti in a tangy, savory sauce. Ingredients

8 ounces spaghetti (cooked)

1 tablespoon olive oil

1 pound shrimp (peeled and deveined, about 20)

1/2 cup diced onion

4 cloves garlic (minced)

1/2 cup natural apple juice (no sugar added)

1 tablespoon lemon juice

1/2 teaspoon oregano

1/2 teaspoon red pepper flakes

2 cups cherry tomatoes (sliced in half)

Fresh grated Parmesan cheese (for garnish)

3 tablespoons fresh chopped parsley

Kosher salt (to taste)

Instructions

  1. Cook the Pasta: Cook spaghetti according to the package instructions. Drain and reserve 1/4 cup of pasta water.

  2. Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season shrimp with kosher salt and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp and set aside.

  3. Cook the Onion and Garlic: In the same skillet, cook diced onion for 2-3 minutes, until softened. Add minced garlic and cook for another 30 seconds until fragrant.

  4. Deglaze with Apple Juice and Lemon Juice: Add apple juice and lemon juice, stirring to combine and deglaze the pan. Simmer for 2-3 minutes until liquid reduces slightly.

  5. Add the Tomatoes and Seasonings: Stir in sliced cherry tomatoes, oregano, and red pepper flakes. Cook for 3-4 minutes until tomatoes soften.

  6. Combine Pasta and Shrimp: Add shrimp and pasta back into the skillet. Toss to combine, adding reserved pasta water if needed to coat the pasta with the sauce.

  7. Serve: Garnish with freshly grated Parmesan and chopped parsley. Serve hot.
