Ingredients

1/4 cup fresh ginger (peeled and thinly sliced)

1 cup water

1/2 cup freshly squeezed lemon juice (about 23 lemons)

2 cups sparkling water (chilled)

Ice cubes

Lemon slices (for garnish)

Instructions

  1. Place the ginger slices and 1 cup of water in a small saucepan. Bring to a boil and then reduce the heat. Let it simmer for about 10 minutes to extract the ginger flavor.

  2. After simmering, stir in the sugar or honey, adjusting sweetness to your preference. Allow the ginger syrup to cool.

  3. Once cooled, strain the syrup to remove ginger slices and pour the liquid into a pitcher.
