Instructions

  1. Prepare the goat cheese filling: In a bowl, combine the goat cheese, honey, dried thyme, chopped walnuts, and sliced almonds. Mix well until all ingredients are evenly incorporated into a smooth mixture.
  2. Shape the croquettes: Using your hands or a small ice cream scoop, shape the goat cheese mixture into small, evenly sized balls or cylinders, about 1 inch in diameter. Place them on a plate or baking sheet.
  3. Set up the breading stations: In one shallow dish, place the all-purpose flour. In a second dish, beat the egg. In a third dish, place the Panko bread crumbs.
  4. Coat the croquettes: Roll each goat cheese ball first in the flour, shaking off excess. Then dip into the beaten egg, making sure it is fully coated. Finally, roll in the Panko bread crumbs until completely covered. Repeat coating steps for an extra crispy crust if desired.
  5. Heat the oil: Pour enough canola oil into a frying pan to reach a depth of about 1 inch. Heat over medium heat until the oil reaches about 350°F (175°C). You can test by dropping a small breadcrumb in; it should sizzle immediately.
