Goulash is a comforting, one-pot meal with lean ground beef, tender pasta, savory vegetables, and flavorful broth. It’s the perfect quick family dinner.

Ingredients

1 lb lean ground beef

1 medium onion, chopped

3 cloves garlic, minced

1 cup bell peppers (any color), diced

14.5 oz can diced tomatoes (with juices)

2 cups elbow macaroni or egg noodles

2 cups low-sodium beef broth

1 tbsp Italian seasoning

Salt and pepper to taste

1 cup shredded cheese (optional)

Instructions

  1. In a large skillet or pot, brown the ground beef over medium heat, breaking it apart with a spoon as it cooks. Once the beef is fully cooked, drain any excess fat.
  2. Add the chopped onion, garlic, and diced bell peppers to the skillet. Cook for about 3-4 minutes until the vegetables begin to soften.
  3. Stir in the diced tomatoes (with juices) and Italian seasoning. Season with salt and pepper to taste.
  4. Pour in the beef broth and bring the mixture to a simmer. Add the elbow macaroni or egg noodles, stirring to combine. Cover and cook for 10-12 minutes, or until the pasta is tender and the liquid has mostly absorbed.
  5. Once the pasta is cooked, give everything a good stir. If desired, sprinkle shredded cheese over the top and let it melt before serving.

Notes

For a vegetarian option, substitute ground beef with a plant-based meat alternative or extra vegetables like mushrooms or zucchini.

If you prefer a spicier dish, add crushed red pepper flakes or diced jalapeños.

You can use any pasta shape you prefer, such as penne, rotini, or spaghetti.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet or microwave, adding a splash of water or broth to prevent drying out.

Goulash can be made ahead of time and stored for up to 3 days or frozen for up to 3 months.
