Ingredients

4 hard-boiled eggs, cooled and peeled

2 slices bread

1 teaspoon mayo, or butter

1 ripe avocado

¼ teaspoon salt

⅛ teaspoon pepper

1 teaspoon lemon juice

Hot honey, optional

Instructions

  1. Toast the slices of bread to your preferred level of crispiness.
  2. While the bread is toasting, peel the hard-boiled eggs and use a grater to finely grate them into a bowl.
  3. In a separate bowl, mash the ripe avocado until smooth. Add the lemon juice, salt, and pepper, and mix well.
