These Greek Grilled Chicken Burgers combine juicy ground chicken seasoned with fresh herbs and spices, grilled to perfection, and topped with a refreshing Mediterranean-style topping of feta cheese, tomatoes, cucumbers, olives, and fresh dill. Served on soft brioche buns with crisp lettuce, these burgers offer a flavorful, healthy twist on a classic favorite with vibrant Greek flavors.

Ingredients

For the Burgers:

  • 2 pounds ground chicken
  • 1 Egg
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon dried oregano

For the Toppings:

  • 8 oz feta cheese block
  • 10 oz grape tomatoes, chopped
  • 2 mini cucumbers, chopped
  • ¼ cup kalamata olives, chopped
  • 1 tablespoon fresh dill, chopped
  • Lettuce leaves for topping
  • Brioche buns for serving

Instructions

  1. Prepare the Burger Mixture: In a large bowl, combine ground chicken, egg, minced shallot, minced garlic, salt, pepper, fresh dill, and dried oregano. Mix thoroughly until all ingredients are well incorporated, taking care not to overwork the meat to keep the burgers tender.
  2. Form the Patties: Divide the mixture into 8 equal portions and shape each portion into a burger patty about ¾ inch thick. Make sure the patties are uniform in size for even cooking.
  3. Preheat the Grill: Heat your grill to medium-high heat, approximately 375-400°F (190-205°C). Oil the grill grates lightly to prevent sticking.
  4. Grill the Burgers: Place the patties on the hot grill and cook for about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C), ensuring they are fully cooked but still juicy. Avoid pressing down on the patties to retain moisture.
  5. Prepare the Toppings: While the burgers cook, crumble the feta cheese and chop the grape tomatoes, mini cucumbers, and kalamata olives. Toss them together in a bowl with fresh dill to create a tangy and fresh topping.
  6. Assemble the Burgers: Toast the brioche buns lightly on the grill if desired. Layer each bun with lettuce, one grilled chicken patty, and a generous spoonful of the feta-tomato-cucumber topping. Serve immediately for the best flavor and texture.

Notes

  • You can substitute ground turkey for chicken if preferred.
  • If fresh dill is not available, dried dill can be used but reduce the quantity to 1 tablespoon to avoid overpowering the flavor.
  • For a spicier kick, add a pinch of crushed red pepper flakes to the burger mixture.
  • Ensure the burgers reach an internal temperature of 165°F (74°C) for safe consumption.
  • Leftover toppings can be stored in the refrigerator for up to 2 days and make a great salad topping.
