Green Beans Almondine is a classic French-inspired side dish featuring tender green beans sautéed with garlic, toasted sliced almonds, and butter for a rich, nutty flavor. This elegant yet simple recipe makes a perfect accompaniment to any meal, bringing a delightful crunch and savory depth to your plate.

Ingredients

Vegetables

  • 1 pound (454 g) green beans, washed and trimmed

Other Ingredients

  • 2 teaspoons kosher salt
  • ½ cup (43 g) sliced almonds
  • 5 tablespoons (71 g) unsalted butter
  • 4 cloves garlic, very finely minced and smashed into a paste
  • Salt and pepper, to taste

Instructions

  1. Prepare the green beans: Wash and trim the green beans by snapping or cutting off the ends. This ensures they cook evenly.
  2. Cook the green beans: Bring a large pot of salted water to a boil. Add the green beans and cook for about 4 to 5 minutes until they are bright green and just tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking and maintain their vibrant color. Drain thoroughly once cooled.
  3. Toast the almonds: In a large skillet over medium heat, add the sliced almonds. Toast them for 3 to 5 minutes, stirring frequently, until golden and fragrant. Remove almonds from the skillet and set aside to prevent burning.
  4. Sauté garlic in butter: In the same skillet, melt the butter over medium heat. Add the garlic paste and sauté for 1 to 2 minutes until fragrant but not browned, to infuse the butter with garlic flavor.
  5. Combine and season: Add the drained green beans back into the skillet with the garlic butter. Toss to coat evenly and warm through for 2 to 3 minutes. Stir in the toasted almonds. Season with additional kosher salt and freshly ground black pepper to taste.
  6. Serve: Transfer the green beans almondine to a serving dish and enjoy warm as a delicious side to complement your main courses.

Notes

  • To make this dish vegan, substitute unsalted butter with olive oil or vegan butter.
  • For extra flavor, consider adding a squeeze of fresh lemon juice before serving.
  • Make sure not to overcook the green beans to retain their crisp texture and vibrant color.
  • Slice almonds can be toasted in the oven at 350°F (175°C) for 5-7 minutes as an alternative to stovetop toasting.
