Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken thighs (1.25 lb.)
  • ¼ cup lime juice
  • 3 Tbsp honey
  • 1 Tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper

Garnish

  • 2 Tbsp fresh cilantro, minced

Instructions

  1. Preheat the grill: Preheat your grill to 375°F to ensure even cooking and a perfect sear on the chicken thighs.
  2. Prepare the marinade: In a large ziplock bag or bowl, combine lime juice, honey, vegetable oil, garlic powder, paprika, cumin, chili powder, dried oregano, salt, and freshly cracked black pepper. Mix well to blend all the flavors.
  3. Marinate the chicken: Add the chicken thighs to the marinade, seal the bag or cover the bowl, and gently massage to coat the chicken evenly. Marinate for 30 minutes, allowing the flavors to infuse deeply.
  4. Grill the chicken: Place the marinated chicken thighs on the preheated grill. Cook for 6-7 minutes on one side without moving, then flip using tongs and grill for another 6-7 minutes, or until the internal temperature reaches 165°F to ensure the chicken is thoroughly cooked.
  5. Serve: Remove the chicken from the grill and transfer to a serving platter or individual plates. Sprinkle with the minced fresh cilantro for a burst of color and freshness.

Notes

  • For best results, use a meat thermometer to check that the chicken has reached an internal temperature of 165°F.
  • You can marinate the chicken for up to 2 hours if time allows for more intense flavor.
  • Serve with a side of grilled vegetables or a fresh salad for a complete meal.
  • Adjust the amount of chili powder for more or less heat according to your preference.
