Ingredients

For the Prawns

  • 16 large prawns, shell on
  • 2 cloves garlic, very finely chopped
  • 1 red chilli, very finely chopped or 1-2 teaspoons chilli flakes
  • Small handful parsley leaves, finely chopped
  • 6 tablespoons olive oil, plus more for grilling

For the Lemons

  • 2 lemons, cut in half

  • Crusty bread

Instructions

  1. Prepare the Marinade: In a bowl, combine the finely chopped garlic, red chilli or chilli flakes, parsley leaves, and 6 tablespoons of olive oil. Mix thoroughly to create a flavorful marinade for the prawns.
  2. Marinate the Prawns: Place the prawns in the marinade, ensuring each prawn is well coated with the mixture. Allow them to marinate for about 15-20 minutes to absorb the flavors.
  3. Prepare the Grill: Preheat your grill or barbecue to medium-high heat. Brush the grill grates lightly with olive oil to prevent the prawns from sticking.
  4. Grill the Lemons: Place the lemon halves cut-side down on the grill. Grill for about 2-3 minutes or until they start to caramelise and soften, which will enhance their sweetness and add a smoky flavor.
  5. Grill the Prawns: Arrange the marinated prawns on the grill. Cook for approximately 2-3 minutes per side or until they turn pink and opaque with slight charring, being careful not to overcook.
  6. Serve: Transfer the grilled prawns to a serving platter, drizzle any remaining marinade over them. Serve immediately with the caramelised lemons and crusty bread to mop up the flavorful juices.
