Ingredients

4 medium yellow squash

½ cup extra-virgin olive oil

2 cloves garlic, crushed

Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Slice the yellow squash into ½-inch thick rounds or long slices, depending on your preference.
  3. In a small bowl, combine the olive oil, crushed garlic, salt, and pepper. Stir well to combine.
  4. Brush the squash slices with the olive oil mixture, making sure each slice is evenly coated.
  5. Place the squash slices on the grill. Grill for about 3-4 minutes on each side or until the squash is tender and has nice grill marks.
  6. Once grilled, remove the squash from the grill and serve immediately. You can drizzle with any remaining olive oil mixture if desired.

Notes

For added flavor, sprinkle chopped fresh herbs like thyme, rosemary, or basil over the grilled squash.

Squeeze fresh lemon juice over the squash just before serving for a citrusy twist.
