Ingredients

Beef and Spices

  • 1 pound lean ground beef
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon ground cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper

Vegetables

  • 1 yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 orange or yellow bell pepper, thinly sliced

Other

  • 1 tablespoon vegetable oil
  • Serving tortillas or rice
  • Optional toppings: avocado/guacamole, salsa, sour cream, shredded cheese, jalapeños, hot sauce

Instructions

  1. Heat skillet: Preheat a large skillet over medium heat to prepare for cooking the beef.
  2. Cook ground beef: Add the lean ground beef to the skillet and cook, stirring regularly to break it apart, until it is fully browned.
  3. Add spices: Incorporate chili powder, smoked paprika, salt, ground cumin, onion powder, garlic powder, dried oregano, and cayenne pepper into the browned beef. Stir thoroughly to coat the meat in the spices and continue cooking for another 2 to 3 minutes to develop flavors.
  4. Drain grease: Remove the seasoned beef from the skillet and set aside. Pour off any excess grease from the skillet.
  5. Sauté vegetables: Add vegetable oil to the skillet and then add the sliced yellow onion and all the bell peppers. Sauté over medium heat until the vegetables become tender and slightly caramelized, about 8 to 10 minutes.
  6. Combine beef and vegetables: Return the cooked ground beef to the skillet with the sautéed vegetables and mix well to combine all ingredients evenly.
  7. Serve: Remove the skillet from heat and serve the fajita mixture warm. Use tortillas or rice as a base and add your favorite toppings such as avocado, guacamole, salsa, sour cream, shredded cheese, jalapeños, or hot sauce.

Notes

  • Use lean ground beef to reduce grease and keep the fajitas healthier.
  • Feel free to substitute different colored bell peppers for visual appeal and flavor variations.
  • Adjust the cayenne pepper amount to control the heat level.
  • These fajitas also work great served over rice or in lettuce wraps for a lower-carb option.
  • Make sure to drain the beef well to avoid a greasy final dish.
  • Leftover fajita mixture can be refrigerated for up to 3 days and reheated gently on the stovetop.
