Ingredients

Potatoes

  • 2 lb / 900 g Russet potatoes

Meat & Dairy

  • 1 lb / 450 g ground beef (80/20 works well)
  • 8 oz / 225 g whipped cream cheese spread
  • 1 cup / 115 g / 4 oz shredded white cheddar cheese

Vegetables

  • 3 tomatoes, sliced

Seasonings & Oils

  • 2 tbsp olive oil
  • 2 tbsp Italian seasoning, divided
  • 1 1/2 tsp salt, divided (or to taste)
  • 1/2 tsp ground pepper, divided (or to taste)
  • 1 tsp garlic powder

Instructions

  1. Prepare the potatoes: Peel and slice the Russet potatoes into even slices about 1/4 inch thick to ensure uniform cooking. Set aside.
  2. Cook the ground beef: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the ground beef, half of the Italian seasoning, 3/4 teaspoon salt, 1/4 teaspoon pepper, and garlic powder. Cook the beef until browned and fully cooked, breaking it apart with a spatula as it cooks, about 7-10 minutes. Drain excess fat if necessary.
  3. Prepare the baking dish: Preheat your oven to 375°F (190°C). Lightly grease a casserole dish with the remaining 1 tablespoon olive oil.
  4. Layer the casserole: Begin by layering the bottom of the casserole dish with a layer of sliced potatoes. Spread half of the whipped cream cheese over the potatoes, then add half of the cooked ground beef mixture evenly on top. Sprinkle with half of the remaining Italian seasoning, a pinch of salt, and pepper. Add a layer of sliced tomatoes. Repeat the layering process with the remaining potatoes, cream cheese spread, ground beef, and tomatoes.
  5. Add cheese and bake: Sprinkle the shredded white cheddar cheese evenly over the top of the casserole. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
  6. Rest and serve: Allow the casserole to rest for about 10 minutes before serving to let it set and cool slightly for easier slicing. Serve warm and enjoy this flavorful and filling meal.
