Gyeran Mari (Korean Rolled Omelette) is a soft, savory dish made with eggs, green onions, and carrots, rolled into layers for a fluffy texture. It’s perfect as a side dish, breakfast, or light meal, offering a simple yet flavorful experience.

Ingredients

5 medium eggs

1 green onion, chopped

2 tbsp carrot, chopped or grated

1/4 tsp salt

1/8 tsp black or white pepper

1 tsp neutral oil

Instructions

  1. Crack the eggs into a bowl and beat until the yolks and whites are fully combined. Add salt and pepper, then stir in the green onion and carrot.
  2. Heat a non-stick pan over medium-low heat and add the oil, ensuring the bottom is coated evenly.
  3. Pour a small amount of the egg mixture into the pan, enough to cover the bottom. Tilt the pan to spread it evenly.
  4. Cook for 1-2 minutes until the eggs are set but not fully cooked. Gently roll the omelette from one end to the other.
  5. Push the rolled omelette to one side of the pan. Pour more egg mixture into the empty space, let it cook for another minute, then carefully roll the first omelette over it.
  6. Repeat the process until all the egg mixture is used, rolling slowly to maintain the layers.
  7. Once fully cooked, remove from the pan and cool slightly before slicing into bite-sized pieces.
  8. Serve warm with rice or as a side dish.

Notes

Vegetables: You can add other vegetables like bell peppers, zucchini, or spinach for extra flavor and color.

Spicy version: Add gochugaru or chopped chili for a spicy twist.

Cheese: Sprinkle cheese on the omelette before rolling for a cheesy version.
