Ingredients

Spicy Mayo

  • 1/2 cup avocado oil mayo
  • 1-2 tablespoons pickled or pepperoncini juice
  • 1 teaspoon hot sauce
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chipotle chili powder
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Kosher salt (to taste)

Sandwich

  • 4 slices rye or sourdough bread, toasted
  • 1 tablespoon salted butter, at room temperature
  • 2-4 slices Havarti cheese
  • 1/2 cup cherry tomatoes, sliced
  • 1/3 cup sun-dried tomatoes, sliced
  • 1/3 cup sliced dill pickles and/or pepperoncini (both can be used)
  • 1 cup fresh sprouts/microgreens
  • 1 avocado, sliced
  • Pickled red onion and/or jalapeños (both can be used)

Instructions

  1. Make the spicy mayo: In a bowl, mix together avocado oil mayo, pickled or pepperoncini juice, hot sauce, smoked paprika, chipotle chili powder, cayenne pepper, and salt. Stir well to combine and set aside.
  2. Preheat the broiler: Set your oven broiler to high to prepare for toasting the sandwich.
  3. Prepare the bread: On a sheet pan, lightly butter the outside of each slice of toasted rye or sourdough bread. On the inside, spread a generous layer of the prepared spicy mayo.
  4. Add cheese and tomatoes: Place the Havarti cheese slices over the mayo on each slice of bread. Evenly distribute the sliced cherry tomatoes on top of the cheese, cut side facing up.
  5. Broil the sandwich: Place the sheet pan under the broiler for 2-4 minutes, watching closely until the cheese bubbles and the tomatoes begin to char slightly.
  6. Layer additional toppings: Remove from the broiler and add sun-dried tomatoes, sliced dill pickles and/or pepperoncini, fresh sprouts or microgreens, sliced avocado, and pickled red onions and/or jalapeños atop the melted cheese and tomatoes.
  7. Assemble the sandwich: Top with the second slice of bread, cheese side down. Slice the sandwich and serve immediately, enjoying it while warm with extra spicy mayo if desired.

  • Watch the sandwich closely while broiling to prevent burning.
  • You can adjust the level of spiciness in the mayo to suit your taste by adding more or less cayenne pepper and hot sauce.
