1 medium red onion, diced

1 red bell pepper, finely diced

3 cloves garlic, minced

2 tablespoons tomato paste

1 teaspoon kosher salt

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

½ teaspoon ground black pepper

1 pound lean ground beef

3 cups beef broth

14 ounces (1 can) kidney beans, drained and rinsed

14 ounces (1 can) fire-roasted diced tomatoes

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and red bell pepper; cook for about 5 minutes until softened.
  3. Stir in garlic and tomato paste; cook for 1 minute until fragrant.
  4. Add salt, smoked paprika, cumin, chili powder, and black pepper; stir to coat vegetables.
  5. Add ground beef and cook, breaking it apart, until browned.
  6. Pour in beef broth, kidney beans, black beans, and fire-roasted tomatoes.
  7. Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes until thickened.
  8. Taste and adjust seasoning before serving.

Notes

Add corn for extra sweetness or swap beef for ground turkey or chicken.

For more spice, add diced jalapeños, cayenne pepper, or chipotle in adobo.

Make it vegetarian by omitting beef and adding more beans or lentils.

Freeze leftovers for up to 3 months for easy meal prep.

Top with avocado, cheese, sour cream, cilantro, or tortilla chips for serving.
