Ingredients

Wet Ingredients

  • 14oz / 400g red apples such as Fuji or Gala – approx 2 medium apples
  • 2 large eggs
  • ⅓ cup melted coconut oil
  • ⅓ cup honey
  • ¼ cup milk – soy milk used
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups rolled oats or oat flour
  • 2 teaspoons cinnamon powder
  • 2 teaspoons baking powder
  • Pinch of salt

Garnish

  • ¼ cup walnuts – finely chopped
  • Small handful of rolled oats
  • Dusting of icing sugar – optional

Instructions

  1. Prepare the Apples: Peel, core, and finely chop or grate the red apples for better texture distribution in the cake batter.
  2. Mix Wet Ingredients: In a large bowl, beat the eggs together with melted coconut oil, honey, milk, and vanilla extract until fully combined and smooth.
  3. Combine Dry Ingredients: In a separate bowl, mix rolled oats (or oat flour), cinnamon powder, baking powder, and a pinch of salt evenly.
  4. Combine Wet and Dry: Slowly add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing. Fold in the chopped apples.
  5. Prepare Baking Pan: Preheat the oven to 350°F (175°C). Lightly grease or line a baking pan with parchment paper.
  6. Pour and Garnish: Pour the batter into the prepared pan. Sprinkle finely chopped walnuts and a small handful of rolled oats evenly over the top. Optionally, dust with icing sugar after baking.
  7. Bake: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
