Ingredients

Rolled oats

All-purpose or whole wheat flour

Baking powder

Ground cinnamon

Ground nutmeg

Salt

Butter or coconut oil (melted)

Egg white

Vanilla extract

Maple syrup

Milk (dairy or plant-based)

Fresh apple, chopped

Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.

  2. In a separate bowl, whisk melted butter or coconut oil, egg white, and vanilla extract. Stir in maple syrup and milk.

  3. Add dry ingredients to wet mixture and stir just until combined.

  4. Fold in chopped apple.

  5. Chill dough for 30 minutes.

  6. Preheat oven to 325°F (163°C). Line baking sheet with parchment or silicone mat.

  7. Drop dough in 15 rounded scoops onto baking sheet; flatten each to about ⅜ inch thick.

  8. Bake for 9-11 minutes until edges are lightly golden.

  9. Cool on pan 10 minutes, then transfer to wire rack to cool completely.

Notes

Substitute apples with pears or dried fruit.

Add chopped nuts for crunch.

Use gluten-free oats and flour for gluten-free version.

Swap maple syrup for honey or agave.
