Ingredients

  • ½ cup Greek Yogurt
  • ½ avocado
  • ½ cup torn kale from about 1 large leaf
  • Juice and zest of one lemon
  • 1 small clove of garlic
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 tablespoons extra-virgin olive oil

Flavor Enhancers

  • 1 tablespoon capers plus 1 tablespoon of the juice
  • 2 tablespoons chopped chives
  • ½ cup soft-leaf herbs (basil, mint, dill, cilantro, parsley, tarragon, etc.)

Instructions

  1. Prepare the ingredients: Gather all the ingredients, wash the fresh herbs and kale leaves thoroughly, and pat them dry. Tear the kale into small pieces for easier blending.
  2. Combine in a blender or food processor: Place the Greek yogurt, avocado, torn kale, lemon juice and zest, garlic clove, kosher salt, black pepper, olive oil, capers with their juice, chopped chives, and soft-leaf herbs into a blender or food processor.
  3. Blend until smooth: Blend all ingredients at medium-high speed until the mixture is creamy and smooth, scraping down the sides as needed to ensure even blending.
