Featuring creamy hummus arranged in a festive wreath shape and topped with fresh vegetables, feta cheese, and optional garnishes, it’s both visually appealing and delicious. The dish is easy to prepare and combines Mediterranean flavors with wholesome ingredients.

Ingredients

Main Ingredients

  • 16 oz hummus (store-bought or homemade)
  • 1 red bell pepper, thinly sliced
  • ½ English cucumber, chopped
  • 6-8 cherry tomatoes, halved
  • ¼ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped

Optional Toppings

  • Drizzle extra virgin olive oil
  • Squeeze of lemon juice
  • 1 tablespoon toasted pine nuts
  • 1 tablespoon chopped green onions

Instructions

  1. Prepare the vegetables: Wash and thinly slice the red bell pepper, chop the cucumber, halve the cherry tomatoes, and finely chop the parsley and green onions if using.
  2. Form the hummus wreath: On a large serving platter, spread the hummus in a circular wreath shape, about 1 inch thick and with a hollow center, creating a festive ring.
  3. Decorate the wreath: Arrange the sliced red bell peppers evenly around the hummus wreath. Then scatter the chopped cucumber, halved cherry tomatoes, crumbled feta cheese, and chopped parsley over the top for color and flavor.
  4. Add optional toppings: Drizzle extra virgin olive oil and a squeeze of fresh lemon juice over the decorated hummus wreath. Sprinkle toasted pine nuts and chopped green onions on top for added texture and taste.
  5. Serve: Serve immediately with pita bread, vegetable sticks, or crackers for dipping, or cover and refrigerate for up to 24 hours to allow flavors to meld.

Notes

  • The wreath can be made with store-bought or homemade hummus based on preference and time.
  • Customize the toppings to your liking by adding olives or other fresh herbs.
  • To toast pine nuts, place them in a dry skillet over medium heat for 2-3 minutes until golden, stirring frequently to avoid burning.
  • This recipe serves well as an appetizer or healthy snack for parties and gatherings.
  • Keep the hummus covered and refrigerated if not serving immediately to maintain freshness.
