These Homemade 5 Ingredient Sour Fruit Gummies are a fun and easy treat made from your favorite jam, lemon juice, and pectin. Perfectly chewy with a tangy twist, these gummies are coated in sugar for that classic gummy candy finish. This recipe yields about 40 servings and requires minimal ingredients and kitchen equipment, making it an accessible and delightful homemade candy option.

Ingredients

Fruit Mixture

  • 1 jar (13 ounce) strawberry, blackberry, or blueberry jam
  • 3/4 cup lemon juice, or use water
  • 2 tablespoons fruit pectin
  • 2 tablespoons collagen (optional)

Coating

  • Granulated sugar, for coating (add to your liking)

Instructions

  1. Prepare the fruit mixture: In a saucepan, combine the jam with the lemon juice or water. Sprinkle the fruit pectin and optional collagen evenly over the surface. Whisk the ingredients together thoroughly until well blended.
  2. Cook the mixture: Place the saucepan on the stove over medium heat. Bring the mixture to a gentle bubble and let it cook for 12-15 minutes. Stir frequently until the pectin has fully dissolved and the liquid becomes smooth, syrupy, and starts to resemble jam in texture.
  3. Mold the gummies: Pour the hot gummy mixture into silicone gummy bear molds or a 9×9-inch parchment-lined baking dish. Refrigerate the molds or dish for at least 2 hours until the gummies are completely set and firm.
  4. Finish and store: Once set, pop the gummy bears out of the molds or cut the gelatin sheet into small squares if using the baking dish method. Place granulated sugar in a bowl and gently toss the gummies to coat them evenly. Store the finished gummies in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • Using lemon juice instead of water adds a pleasant sourness and helps with preserving the gummies.
  • The collagen is optional but adds extra chewiness to the gummies.
  • Make sure to cook the mixture until fully smooth and syrupy to ensure proper gelatinization and texture.
  • You can customize the fruit flavor by choosing your preferred jam variety.
  • Store gummies refrigerated in an airtight container to maintain freshness.
