Ingredients

Donut Batter

  • 4 tablespoons salted butter
  • 1/3 cup maple syrup or honey
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 eggs, at room temperature
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips

Chocolate Glaze

  • 2 tablespoons avocado oil
  • 1 cup mini chocolate chips

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a 6-cup donut pan or a 12-cup muffin pan generously with melted butter to prevent sticking.
  2. Brown the butter: Place 4 tablespoons of salted butter in a medium pot over medium heat. Let it cook for 2-3 minutes until it browns lightly and emits a toasted aroma. Remove from the heat promptly to prevent burning.
  3. Mix wet ingredients: In a large mixing bowl, whisk together the browned butter, maple syrup (or honey), plain Greek yogurt, eggs, and vanilla extract until smooth and combined.
  4. Add dry ingredients: Sift or add the all-purpose flour, baking powder, baking soda, and salt to the wet ingredients. Gently mix until just combined to avoid overmixing the batter, which keeps the donuts tender.
  5. Fill the pan and bake: Divide the batter evenly among the prepared donut or muffin cups, filling each about half to two-thirds full. Bake for 10-12 minutes or until the donuts are just set and a toothpick inserted comes out clean.
  6. Cool the donuts: Remove the donuts from the oven and allow them to cool in the pan for 5 minutes. Then, run a knife around the edges of the donuts to loosen them and invert the pan to release the donuts onto a cooling rack.
