Ingredients

2 tablespoons unsulphured molasses

¼ cup water

2 tablespoons dark brown sugar

1 teaspoon fresh ginger, grated

¼ teaspoon ground ginger

¾ teaspoon ground cinnamon

⅛ teaspoon ground nutmeg

Pinch ground cloves

½ teaspoon vanilla extract

Instructions

  1. Combine molasses, water, brown sugar, grated fresh ginger, ground ginger, cinnamon, nutmeg, and cloves in a small saucepan.
  2. Heat over medium heat, stirring occasionally until sugar dissolves and syrup gently simmers.
  3. Reduce heat to low and simmer 5–7 minutes, stirring frequently to infuse flavors.
  4. Remove from heat, strain syrup through a fine mesh sieve, and stir in vanilla extract.
  5. Cool completely, transfer to a clean jar or bottle, and store in refrigerator up to 2 weeks.

Notes

Add ground black pepper or cayenne for a spicy kick.

Include a strip of orange peel while simmering for a citrus twist.

Swap brown sugar with maple syrup or coconut sugar for different sweetness profiles.

Recipe is vegan-friendly using plant-based ingredients.

Warm gently and stir in water if syrup thickens too much.
