Ingredients

Dry Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt

Cheese and Butter

  • 1 stick cold salted butter, shredded
  • 1 cup shredded sharp cheddar cheese

Wet Ingredients

  • 1 cup whole milk
  • 2 teaspoons honey

Honey Butter Topping

  • 4 tablespoons salted butter (divided: 2 tablespoons for biscuits, 2 tablespoons for honey butter)
  • 1-2 teaspoons honey
  • 1/2 teaspoon garlic powder
  • Fresh chopped basil or parsley (about 1 tablespoon)
  • Sea salt, for sprinkling

Instructions

  1. Preheat and Prepare Skillet: Preheat your oven to 425°F. Generously rub a 10-inch cast iron skillet with butter to prevent sticking and add flavor.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, garlic powder, onion powder, and salt. Mix these thoroughly to distribute the seasonings evenly.
  3. Incorporate Butter and Cheese: Using your hands, mix in the shredded cold butter and shredded sharp cheddar cheese until the mixture resembles coarse crumbs with visible butter chunks.
  4. Add Wet Ingredients: Pour over the milk and add 2 teaspoons of honey. Stir until just combined to form a dough. Avoid overmixing to keep the biscuits tender.
  5. Fold the Dough: Turn the dough out onto a floured surface. Pat it into a 1-inch-thick rectangle. Fold one side into the center, then fold the other side on top, like folding a letter. Turn the dough horizontally, flatten it into a rectangle again, and repeat the folding once more. Finally, flatten the dough into a 3/4-inch-thick rectangle. This layering technique helps create flaky biscuits.
  6. Cut Biscuits: Using a 3-inch biscuit cutter, cut the dough into circles. Re-roll the remaining dough and cut additional circles until all dough is used.
  7. Arrange and Prepare for Baking: Arrange the biscuits in the buttered cast iron skillet. Brush the tops with milk to help them brown beautifully. Dot 2 tablespoons of butter around the biscuits in the skillet.
  8. Bake Biscuits: Bake the biscuits in the preheated oven for 20-22 minutes, or until they are golden brown and cooked through.
  9. Prepare Honey Butter: While the biscuits bake, melt 2 tablespoons of butter in a small saucepan over low heat. Stir in 1-2 teaspoons honey and 1/2 teaspoon garlic powder. Remove from heat and add fresh chopped basil or parsley, mixing well.
  10. Serve: Once the biscuits are done, serve them warm with the honey butter drizzled on top and a sprinkle of flaky sea salt for extra flavor.

Notes

  • Use cold butter for best flaky biscuit texture.
  • Do not overmix the dough to keep biscuits tender.
  • You can substitute fresh herbs with dried herbs, but reduce quantity to about one-third.
  • Cast iron skillet provides even heat and a crispy bottom, but you can bake on a baking sheet if needed.
  • Adjust honey in honey butter to taste for desired sweetness.
