Honey BBQ Chicken Rice is a one-pot meal that combines juicy chicken, sweet honey BBQ sauce, and tender rice, served with mixed vegetables for a complete, satisfying dish.

Ingredients

1 lb boneless, skinless chicken thighs or breasts

1 cup long-grain rice

2 cups chicken broth

½ cup BBQ sauce (your choice)

¼ cup honey

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

1 cup mixed vegetables (frozen or fresh)

Chopped green onions or parsley (optional)

Instructions

  1. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Heat a large skillet or Dutch oven over medium-high heat. Add a small amount of oil and cook the chicken for 6-7 minutes on each side until browned and fully cooked (internal temperature should reach 165°F or 75°C). Remove the chicken from the pan and set it aside.
  3. In the same pan, combine the BBQ sauce and honey. Stir to combine and cook for 1-2 minutes over medium heat, allowing the sauce to thicken slightly.
  4. Add the chicken broth and rice to the pan with the BBQ mixture. Stir to combine, then bring it to a simmer. Cover the pan and reduce the heat to low. Let it cook for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. In the final 5 minutes of cooking the rice, add the mixed vegetables to the pan. Stir them into the rice and cover again to let them cook.
  6. Shred or slice the chicken while the rice and vegetables finish cooking.
  7. Once the rice is cooked and the vegetables are tender, add the shredded chicken back into the pan. Stir everything together and allow it to heat through.
  8. Garnish with chopped green onions or parsley if desired, then serve.

Notes

Feel free to add extra vegetables like bell peppers, carrots, or peas for more flavor and texture.

For a spicier dish, add hot sauce or cayenne pepper to the BBQ sauce mixture.

Substitute chicken with plant-based protein or tofu for a vegetarian version.

This dish is great for meal prep and can be stored in the fridge for up to 3 days.

For extra flavor, cook the rice in chicken broth instead of water.
