Ingredients

4 boneless, skinless chicken breasts

½ cup pineapple juice

¼ cup honey

2 tbsp soy sauce

2 tbsp olive oil

2 cloves garlic, minced

1 tbsp fresh lime juice

1 tsp ground ginger

Salt and pepper to taste

Fresh cilantro (optional, for garnish)

Instructions

  • Whisk pineapple juice, honey, soy sauce, olive oil, garlic, lime juice, ground ginger, salt, and pepper in a bowl.

  • Place chicken breasts in a resealable bag or shallow dish; pour marinade over. Seal and refrigerate 1-4 hours.

  • Preheat grill to medium-high heat.

  • Remove chicken from marinade, discard marinade.

  • Grill chicken 6-8 minutes per side until internal temperature reaches 165°F (74°C).

  • Let rest a few minutes; garnish with cilantro if desired and serve.
