Ingredients

Dip Base

Shrimp Scampi

  • 3 tablespoon unsalted butter, divided

  • ½ cup dry white wine (such as Chardonnay)
  • ½ cup fresh parsley, chopped
  • 1 teaspoon lemon zest

Instructions

  1. Prepare the shrimp: In a large skillet, melt 2 tablespoons of the unsalted butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned.
  2. Cook the shrimp: Add the cleaned shrimp to the skillet. Season with half of the kosher salt and cook for 2-3 minutes until pink and opaque. Pour in the white wine and cook for another 2 minutes, allowing the alcohol to evaporate and flavors to meld. Stir in half of the chopped parsley and lemon zest. Remove from heat and set aside.
  3. Make the dip base: In a medium bowl, combine the room temperature cream cheese, sour cream, mayonnaise, half of the Parmesan cheese, shredded mozzarella cheese, remaining kosher salt, and the remaining parsley. Mix well until smooth and creamy.
  4. Assemble the dip: Fold the cooked shrimp and any pan juices into the cheese mixture until evenly incorporated.
  5. Prepare topping: In a small bowl, mix the remaining Parmesan cheese with the panko breadcrumbs. Melt the remaining 1 tablespoon of butter and stir it into the breadcrumb mixture to create a crunchy topping.
