This Ice Cream Sandwich Cake is a no-bake, layered dessert with vanilla ice cream sandwiches, whipped topping, hot fudge, caramel, and pecans. It’s creamy, crunchy, and incredibly indulgent!

Ingredients

24 vanilla ice cream sandwiches, unwrapped

2 (8 ounce) containers whipped topping (such as Cool Whip®), thawed

1 (12 ounce) jar hot fudge ice cream topping, warmed

1 (12 ounce) jar caramel ice cream topping

¼ cup chopped pecans, or to taste

Instructions

  1. Lay 12 of the ice cream sandwiches on the bottom of a 9×13-inch baking dish, arranging them in a single layer.
  2. Spread one of the containers of whipped topping over the ice cream sandwiches, smoothing it out evenly.
  3. Drizzle half of the warm hot fudge topping and half of the caramel topping over the whipped topping layer.
  4. Sprinkle a portion of the chopped pecans over the top for added texture and flavor.
  5. Repeat the process with another layer of 12 ice cream sandwiches, the remaining whipped topping, and the rest of the hot fudge and caramel sauces.
  6. Finish by adding the rest of the pecans on top.
  7. Cover the dish with plastic wrap or foil and freeze for at least 4 hours, or until the cake is fully set.
  8. Slice and serve chilled.

Notes

Add mini chocolate chips, crushed cookies, or sprinkles for a fun topping variation.

Fresh fruit like strawberries or bananas can be layered in for a fruity twist.

If nut-free, use crushed graham crackers or drizzle chocolate syrup for texture.

For flavor variety, try using chocolate or cookies and cream ice cream sandwiches.
