A light and tender French apple almond cake made with almond flour, spiced batter, and fresh apples that bake into a moist, fragrant crumb. Finished with sliced almonds and a dusting of sugar, it’s simple yet elegant enough for any occasion.
¾ cup (90g) all-purpose flour
⅓ cup (35g) almond flour
¾ tsp baking powder
½ tsp kosher salt
¼ tsp ground cinnamon
Pinch of ground nutmeg
2 large eggs (100g), room temperature
¾ cup (150g) granulated sugar
8 Tbsp (113g) unsalted butter, melted and cooled slightly
2 tsp pure vanilla extract or vanilla bean paste
3 medium Honeycrisp apples, sliced into ¼–½-inch thick wedges (about 3½–4 cups; ~400g, unpeeled)
⅓ cup (30g) sliced almonds
Confectioners’ sugar, for dusting
Swap Honeycrisp apples for Gala, Fuji, or Granny Smith.
For extra spice, add cardamom or cloves.
Try pears instead of apples for a different twist.
Store covered at room temp for 2 days or refrigerate up to 5 days.
Freeze tightly wrapped for up to 2 months.
