Instant Pot Creole Chicken and Sausage is a bold, flavorful one-pot meal combining tender chicken, smoky Andouille sausage, and a vibrant mix of peppers and tomatoes. Cooked quickly in an Instant Pot, this dish delivers the rich, savory flavors of classic Creole cuisine without hours of simmering. Perfect over rice or your favorite toppings, it’s a weeknight dinner winner.

Ingredients

1 pound boneless, skinless chicken breasts

1216 ounces Andouille sausage, sliced

1 14-ounce can fire-roasted crushed tomatoes

23 tablespoons tomato paste (optional, for thicker sauce)

2 green or red bell peppers, chopped

½ onion, diced

3 cloves garlic, minced

1 tablespoon Creole seasoning

12 teaspoons salt (if Creole seasoning doesn’t contain salt)

Optional toppings: cooked rice, shredded cheese, chopped cilantro, sliced green onions, hot sauce, sour cream

Instructions

  1. Set Instant Pot to sauté mode and lightly brown sausage slices 3–4 minutes. Remove and set aside.
  2. Add oil if needed, sauté onion, bell peppers, and garlic 2–3 minutes until fragrant and slightly softened.
  3. Add chicken, Creole seasoning, salt, crushed tomatoes, and tomato paste (if using). Stir to combine.
  4. Return sausage to pot. Secure lid and set Instant Pot to manual high pressure for 10 minutes.
  5. Allow natural pressure release for 5 minutes, then carefully release remaining pressure.
  6. Remove chicken, slice or shred as desired, then return to sauce and stir to combine.
  7. Serve hot over rice or choice of base, and top with cheese, cilantro, green onions, hot sauce, or sour cream.

Notes

Use chicken thighs for extra flavor and juiciness.

Add okra or corn for more vegetables and a true Creole touch.

Make spicier with additional cayenne pepper or hot sauce.

Serve with cauliflower rice or quinoa for a lower-carb option.
