6 tablespoons unsalted butter, at room temperature
1 ½ tablespoons finely chopped rosemary
1 tablespoon finely chopped thyme
1 tablespoon finely chopped cilantro (optional)
2 teaspoons crushed coriander seeds (optional)
1 teaspoon garlic purée
1 teaspoon salt
1 cup (236 ml) chicken stock
For Keto Gravy: ¼ lemon, juiced; ¼ teaspoon xanthan gum
For Regular Gravy: 2 tablespoons cornstarch; 2 tablespoons water
