Italian Quesadillas are a delicious twist on the classic quesadilla, filled with rotisserie chicken, mozzarella, fresh basil, and pizza sauce. These crispy, golden quesadillas are a savory, quick meal that combines the flavors of pizza with the convenience of a quesadilla.

Ingredients

4 tortillas

16 oz rotisserie chicken, chopped or shredded

2 tbsp fresh basil, chopped or chiffonade

1 cup part-skim mozzarella cheese

½ jar pizza sauce (about 135 grams)

Instructions

  1. Prepare the Ingredients: Shred or chop the rotisserie chicken into small, bite-sized pieces. Chop the fresh basil into thin strips (chiffonade) or roughly chop, depending on your preference.
  2. Assemble the Quesadillas: Place a tortilla on a clean surface. Spread a thin layer of pizza sauce on one side of the tortilla. Sprinkle a generous amount of shredded mozzarella cheese over the sauce. Add a portion of the shredded rotisserie chicken and some fresh basil on top.
  3. Cook the Quesadillas: Heat a large skillet or griddle over medium heat. Place the assembled quesadilla in the skillet and cook for about 2-3 minutes on each side, pressing down gently with a spatula, until the tortilla is golden brown and the cheese is melted. You can cook one quesadilla at a time or cook multiple if your skillet is large enough.
  4. Serve: Once the quesadillas are crispy and golden, remove them from the skillet. Slice them into wedges and serve immediately with extra pizza sauce on the side for dipping.

Notes

You can add other ingredients like sautéed onions, bell peppers, or mushrooms to the quesadillas for extra flavor.

Mixing in some Parmesan cheese along with mozzarella will enhance the flavor.

For a spicy kick, add red pepper flakes or drizzle hot sauce over the pizza sauce.
