Korean Strawberry Milk is a sweet, creamy, and refreshing beverage made with fresh strawberries, sugar, and non-dairy milk, perfect for a cooling treat on a hot day.

Ingredients

1 pound strawberries, finely diced (2 ¾ cups) – Divided into 2 cups and ¾ cup

¼ cup cane/brown sugar

Squeeze of lemon juice

23 cups unsweetened non-dairy milk

Instructions

  1. Start by preparing the strawberries. Take 2 cups of the diced strawberries and place them in a bowl. Add the sugar and squeeze in a little lemon juice. Stir gently to combine and let this sit for about 10-15 minutes to allow the strawberries to release their juices and become syrupy.
  2. Once the strawberries have softened and released their juices, mash them slightly using a fork or potato masher. This will help to create a thick strawberry syrup.
  3. In a glass, add about 3-4 tablespoons of the mashed strawberry syrup.
  4. Pour 2-3 cups of your preferred unsweetened non-dairy milk into the glass and stir to combine. Taste and add more strawberry syrup if you prefer a stronger strawberry flavor or more sweetness.
  5. Add the remaining ¾ cup of fresh diced strawberries to the drink for extra texture and garnish. Optionally, you can serve this drink over ice for an extra chill factor.

Notes

You can adjust the sweetness by using more or less sugar, or even by using honey or maple syrup as a substitute.

Experiment with different non-dairy milks such as almond milk, oat milk, or coconut milk for varied flavors.

Consider adding a dash of vanilla extract or a sprinkle of cinnamon for a unique twist.

If using frozen strawberries, thaw them before mashing to achieve a syrupy texture.

The strawberry syrup can be made ahead and stored in the fridge for 3-4 days.
