These Lavender Honey Peach Cups combine juicy roasted peaches with creamy lavender-infused frozen yogurt for a refreshing, elegant summer dessert. The floral honey and tart yogurt pair perfectly with the sweetness of ripe peaches and a sprinkle of pistachios.

Ingredients

For the Lavender Frozen Yogurt:

500 g full-fat Greek yogurt

100 ml honey

1 tbsp dried culinary lavender

1 tsp vanilla extract

1 tsp finely grated lemon zest

Pinch of sea salt

For the Peach Cups:

6 ripe but firm peaches

Extra lavender sprigs or edible flowers, for garnish

Optional: extra honey for drizzling

To Serve:

Crushed pistachios (optional)

Fresh lavender or mint leaves (optional, for garnish)

Instructions

  1. Warm honey gently in a small saucepan over low heat. Add dried lavender and let steep for 10 minutes, then strain to remove lavender buds.
  2. In a bowl, whisk together Greek yogurt, infused honey, vanilla extract, lemon zest, and a pinch of sea salt until smooth.
  3. Pour mixture into an ice cream maker and churn until creamy. Alternatively, freeze in a shallow container, stirring every 30–40 minutes until smooth and set.
  4. Preheat oven to 375°F (190°C). Halve peaches and remove pits.
  5. Place peaches cut-side up in a baking dish. Drizzle lightly with honey if desired and roast for 20 minutes until tender but holding shape.
  6. Cool peaches slightly before serving.
  7. To serve, spoon a scoop of lavender frozen yogurt into each roasted peach half, sprinkle with crushed pistachios, and garnish with fresh lavender or mint leaves.
