Instructions

  1. Prepare Ingredients: Drain and rinse the white beans thoroughly. Press or mince the garlic cloves, chop the fresh dill, and zest the lemon. Measure out tahini, lemon juice, sea salt, and olive oil.
  2. Blend Base Ingredients: In a food processor or high-speed blender, combine the drained white beans, tahini, 1 tsp lemon zest, 3 Tbsp lemon juice, sea salt, garlic, and olive oil. Blend until creamy, scraping down the sides as needed. Blend about 1 minute for a creamy texture; blend less for chunkier texture or more for silky smoothness.
  3. Add Herbs: Add the chopped fresh dill (or alternative herbs) to the blender and pulse briefly to incorporate without fully pureeing the herbs.
  4. Adjust Flavors: Taste the dip and adjust to preference by adding more garlic for sharpness, additional lemon zest or juice for brightness, salt for seasoning, olive oil for richness, more dill for herbal notes, or tahini for nuttiness. Blend or pulse again briefly if more ingredients are added.
  5. Chill or Serve: Enjoy the dip immediately or refrigerate it to chill, which will also allow it to thicken slightly. For serving, optionally garnish with extra olive oil, lemon zest, and fresh dill.
  6. Serve With: Pair the dip with pita bread, chips, crackers, or fresh and roasted vegetables such as carrots, radish, cucumber, or beets.
  7. Storage: Store leftovers covered in the refrigerator for up to 4-5 days. This dip is not suitable for freezing.
