Lemon Dijon Roasted Carrots are a flavorful side dish with a tangy, sweet glaze made from Dijon mustard, lemon, honey, and fresh dill. These carrots are roasted to perfection and can be topped with crumbled feta for added richness.

Ingredients

1 lb carrots, washed & peeled

1 Tbsp avocado oil

2 Tbsp lemon juice, divided

1 Tbsp Dijon mustard

1 Tbsp honey

2 garlic cloves, minced

1 Tbsp fresh dill, chopped (or 1 tsp dried dill)

¼ tsp salt

Black pepper, to taste

¼ cup feta cheese, crumbled (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash and peel the carrots, then cut them into evenly-sized pieces, either in halves or quarters depending on their thickness.
  3. In a small bowl, whisk together the avocado oil, 1 tablespoon of lemon juice, Dijon mustard, honey, minced garlic, chopped dill, salt, and black pepper.
  4. Place the prepared carrots on the baking sheet. Drizzle the glaze over the carrots and toss them to coat evenly.
  5. Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, stirring once halfway through for even roasting.
  6. After roasting, remove the carrots from the oven and drizzle with the remaining tablespoon of lemon juice. If desired, sprinkle crumbled feta cheese on top before serving.

Notes

Add red pepper flakes or a dash of hot sauce to the glaze for a spicy kick.

Swap out the dill for fresh herbs like thyme, rosemary, or parsley for a different flavor.

Maple syrup can replace honey for a different sweetness profile.

Toast almonds or walnuts and sprinkle them over the carrots after roasting for added crunch.

This recipe can be made ahead by coating the carrots with the glaze and refrigerating for up to 2 hours before roasting.
