Lemon Lime Cherry Pistachio Cheesecake is a bright, creamy dessert blending zesty lemon and lime flavors with sweet maraschino cherries and crunchy pistachios. Set on a buttery graham cracker crust and topped with whipped cream and citrus zest curls, this cheesecake is perfect for celebrations or anytime you want a vibrant, flavorful treat.

Ingredients

Crust:

1 ½ cups graham cracker crumbs

¼ cup crushed pistachios

6 tbsp melted butter

Filling:

16 oz cream cheese, softened

½ cup sugar

2 tbsp lemon juice

2 tbsp lime juice

1 tsp lemon zest

1 tsp lime zest

2 eggs

½ tsp vanilla extract

½ cup chopped maraschino cherries

¼ cup chopped pistachios

Topping:

Whipped cream

Extra cherries and pistachios

Lemon & lime zest curls

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, crushed pistachios, and melted butter. Press firmly into bottom of a 9-inch springform pan. Bake 8-10 minutes, then cool.

  2. Beat cream cheese until smooth. Add sugar, lemon & lime juice, zest, eggs, and vanilla; beat until creamy. Fold in cherries and pistachios.

  3. Pour filling over cooled crust. Bake 45-50 minutes until edges set and center jiggles slightly. Turn off oven; leave cheesecake inside with door ajar for 1 hour to prevent cracks.

  4. Cool to room temperature, then refrigerate 4+ hours or overnight.

  5. Top with whipped cream, extra cherries, pistachios, and zest curls before serving.

Notes

Substitute fresh or frozen cherries for maraschino for less sweetness.

Add limoncello or cherry liqueur for an adult twist.

Use almond crust for a nutty alternative.

Drizzle with cherry syrup or lemon glaze for extra flavor.
