Ingredients

Truffle Mixture

  • 1 cup white chocolate chips (180 g)
  • 1/4 cup butter (60 g)
  • 1 big pinch salt
  • 2 tbsp lemon zest (from 2 lemons)
  • 3 tbsp heavy whipping cream
  • 1 tsp vanilla paste or extract (optional)
  • 2-3 drops yellow food coloring (optional)
  • a couple drops lemon extract

For Coating

  • 1/4 cup powdered sugar for rolling

Instructions

  1. Prepare the white chocolate: Place the white chocolate chips in a medium mixing bowl and set aside to prepare for melting.
  2. Make the lemon cream mixture: In a small saucepan, melt the butter with the pinch of salt and lemon zest. Stir in the heavy cream and gently heat until just about to boil. Then, pour this hot cream mixture through a fine-mesh sieve directly over the white chocolate chips to ensure smoothness. Add vanilla paste or extract and optional yellow food coloring, stirring until fully melted and the mixture is smooth.
  3. Chill the mixture: Cover the truffle mixture and refrigerate for 30 minutes to 1 hour or until firm enough to scoop and shape.
  4. Shape the truffles: Using a heaping teaspoon, scoop out portions of the mixture and roll them into balls with your hands. Then, roll each ball in the powdered sugar to coat thoroughly.
  5. Final chill: Place the coated truffles in the refrigerator for at least 30 minutes to firm up before serving or storing.

Notes

  • Use fresh lemon zest for the brightest flavor.
  • Yellow food coloring is optional and only for enhancing the lemony appearance.
  • The truffles can be stored in an airtight container in the refrigerator for up to one week.
