Leprechaun Lemonade is a festive, vibrant green lemonade perfect for St. Patrick’s Day or any fun gathering. This refreshing drink combines fresh lemon juice with a natural or traditional green coloring option, balanced with honey or syrup for sweetness, served chilled with optional garnishes for a delightful presentation.

Ingredients

Base Ingredients

  • 1 cup fresh lemon juice (about 68 lemons)
  • 4 cups cold water
  • ½ cup honey, agave syrup, or simple syrup (adjust sweetness to your liking)

Green Color Options

  • 12 drops green food coloring (traditional option)
  • 12 teaspoons fresh spinach juice (natural alternative)

Additions

  • Ice cubes
  • Optional Garnishes: Lemon slices or wedges
  • Optional Garnishes: Fresh mint sprigs
  • Optional Garnishes: Green sanding sugar or edible glitter for rimming glasses

Instructions

  1. Juice the Lemons: Squeeze fresh lemons until you have one cup of lemon juice, ensuring no seeds or pulp remain for a smooth base.
  2. Mix Base Ingredients: In a large pitcher, combine the fresh lemon juice with 4 cups of cold water and ½ cup of your chosen sweetener (honey, agave syrup, or simple syrup). Stir thoroughly until the sweetener is fully dissolved.
  3. Add Green Color: For a festive green hue, add 1–2 drops of green food coloring or 1–2 teaspoons of fresh spinach juice if you prefer a natural alternative. Stir gently to evenly distribute the color.
  4. Serve: Fill glasses with ice cubes and pour the green lemonade over the ice.
  5. Garnish and Present: Optionally, rim the glasses with green sanding sugar or edible glitter. Add lemon slices or wedges and fresh mint sprigs to the glasses for a decorative and aromatic touch.

Notes

  • Adjust the sweetness according to your preference by adding more or less sweetener.
  • Spinach juice provides a natural green color but may slightly alter the flavor.
  • To make spinach juice, blend fresh spinach with a small amount of water and strain to remove solids.
  • This lemonade is best served cold and consumed within 1-2 days for optimal freshness.
  • For a sparkling version, replace some or all of the cold water with sparkling water.
