Ingredients

2 lbs Brussels sprouts

3 Tbsp melted coconut oil or olive oil

½ Tbsp chili flakes (or cracked black pepper)

¼ cup maple syrup

½ tsp sea salt or kosher salt

Extra salt to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim stems from Brussels sprouts and cut them in half.
  3. Toss sprouts in a large bowl with oil, chili flakes, maple syrup, and salt until evenly coated.
  4. Spread in a single layer on baking sheet.
  5. Roast for 25–30 minutes, stirring halfway, until caramelized and crispy on the edges.
  6. Taste and season with extra salt before serving.

Notes

Add a squeeze of lemon juice before serving for brightness.

Top with toasted pecans or walnuts for crunch.

Add crispy bacon pieces for a savory variation.

Drizzle with balsamic glaze after roasting for extra depth.

Use honey instead of maple syrup for a different sweetness.
