‘Marry Me’ Tuscan Chicken Gnocchi Soup is a creamy, comforting soup bursting with flavor. Tender shredded chicken, pillowy gnocchi, sun-dried tomatoes, and kale swim in a rich, herby broth. Perfect for weeknight dinners or cozy weekend indulgence, and best served with homemade garlic Texas toast.

Ingredients

2 cups cooked and shredded organic chicken breasts

1 tablespoon extra virgin olive oil

2 tablespoons unsalted butter

1 (16 oz.) package potato gnocchi (homemade or store-bought)

4 garlic cloves, minced

4 cups organic chicken stock

3 tablespoons organic all-purpose flour

1 ½ tablespoons Tuscan ‘Marry Me’ blend (store-bought or homemade)

1 teaspoon sea salt

56 organic sun-dried tomatoes (or roasted herb tomatoes)

1 tablespoon tomato paste

1 ½ cups organic heavy cream

3 tablespoons cooking wine (optional)

½ lemon, freshly squeezed

1 cup chopped organic kale, fresh or frozen

1 cup freshly-grated parmesan

12 cups tomatoes, optional (fresh or roasted)

Homemade Texas Toast Garlic Bread for serving

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add garlic and sauté until fragrant.
  2. Stir in flour to make a light roux, cooking 1–2 minutes to remove raw flour taste.
  3. Gradually whisk in chicken stock until smooth.
  4. Add Tuscan ‘Marry Me’ blend, sea salt, sun-dried tomatoes, tomato paste, and optional fresh tomatoes. Simmer 5 minutes.
  5. Stir in heavy cream and cooking wine, then add shredded chicken. Simmer 10 minutes.
  6. Add gnocchi and cook according to package instructions, usually 2–3 minutes, until they float and are tender.
  7. Stir in lemon juice and kale, cooking 2–3 minutes until kale is wilted.
  8. Remove from heat and stir in freshly grated parmesan. Adjust seasoning as needed.
  9. Serve immediately with homemade Texas Toast Garlic Bread for dipping.

Notes

For vegetarian version, substitute chicken with roasted vegetables or chickpeas.

Add a pinch of red pepper flakes for a spicy twist.

Swap gnocchi with gluten-free or sweet potato gnocchi as desired.

Stir in mascarpone for extra creamy richness.

Spinach or Swiss chard can replace kale if preferred.

Gnocchi should be added just before serving if making ahead.
